- Storage: Ramen broth can be refrigerated for up to 3 days or frozen for 3 months. Remember to leave space in your container for the broth to expand upon freezing.
- Noodle Knowledge: Whether it’s fresh, wheat, or instant ramen, all noodle types are champions in their own right. But for the best experience, fresh or homemade ramen truly stands out.

Salmon Ramen Delight is a captivating culinary creation that showcases a harmonious fusion of delicate salmon and tantalizing ramen. With its exquisite blend of flavours and textures, this recipe is a true delight for both the palate and the senses. Elevate your dining experience with this remarkable dish that will surely impress even the most discerning of guests.
Ingredients:
For the Salmon:
- 1-pound salmon fillet
- 1/4 cup low-sodium soy sauce
- 2 tbsp Manjo Aji-Mirin Sweet Cooking Rice Wine
- 1/2 tsp Chinese five-spice blend seasoning
- 1 tbsp sesame oil
- 1/8 tsp sea salt
- 1 tbsp granulated sugar
- 1 tbsp light brown sugar
- 1-inch piece of freshly grated ginger
- 2 large garlic cloves, minced
- 5 green onion stalks, roots removed, tops trimmed
For the Ramen:
- 2 servings of ramen noodles (fresh, wheat, or instant)
- 4 cups low-sodium chicken stock
- 1/3 cup low-sodium soy sauce
- 1/8 tsp ground white pepper
- 1/2 ounce kombu (dried kelp) or nori (seaweed)
- 1/2 cup bonito flakes
- 1 tbsp sesame oil
Vegetable Medley:
- 1/4 cup sliced cremini mushrooms
- 1/4 cup assorted mini sweet pepper slices
- 1/4 cup julienned carrots
- 1-2 green onion stalks, thinly sliced
- 1-2 green onion stalks, thinly sliced
- 1 hard-boiled egg, halved
Garnish:
- 1 tsp garlic chilli oil (adjust to taste)
- 1/2 tsp sesame seeds
- Additional sliced green onions
Instructions:
- Salmon Preparation:
- Preheat your oven to 350°F.
- Mix together soy sauce, mirin, five-spice blend, granulated sugar, brown sugar, ginger, and garlic in a bowl. Reserve a portion for later.
- Pat the salmon dry and apply the mixture evenly.
- On a baking tray lined with foil, drizzle sesame oil and arrange green onion stalks as a bed for the salmon.
- Bake for 30 minutes. Once done, glaze with the reserved sauce mixture.
- Ramen Broth:
- On the Instant Pot, activate the Sauté mode. Combine chicken stock, soy sauce, white pepper, kombu, bonito flakes, and sesame oil.
- Once it boils, switch to the ‘Keep Warm’ setting and allow the flavours to meld.
- Veggies & Noodles:
- Transfer a cup of broth to a pan and sauté mushrooms for 2 minutes. Reserve.
- Prepare ramen noodles as per package instructions until al dente.
- Have the julienned carrots, sliced peppers, and green onions ready.
- Serving:
- Distribute noodles into two bowls—layer on the salmon, mushrooms, carrots, and peppers.
- Pour in the aromatic broth, and finalize with green onions, sesame seeds, garlic chilli oil, and a halved egg.
